This chapter presents various interviews and reports that detail the different aspects of the good-and-bad era of nutritionism. In particular, it provides an overview of The 1977 Dietary Goals for the United States to contextualize the reductive nutritional paradigm at that period. The defining characteristic of the good-and-bad era of nutritionism was scientists' differentiation of nutrients into good and bad types. It was dominated by the negative nutritional messages of nutrition experts and dietary guidelines, emphasizing the need to eat less of the bad nutrients and the implicitly bad foods that contained them. The shift to this new paradigm was attributed to the problems of the quantifying nutritionism paradigm, and the decision of U.S government to endorse the Dietary Goals, a guideline for eating good and bad foods.
