This chapter discusses the function of the olfactory cortex. The remarkable properties of the olfactory cortex make it an essential player in the human brain flavor system. Most significantly, it represents the transition from the steps of extracting features in the smell stimulus to the steps of creating the perceptual qualities of smell. It is where the external features of the outside world meet the internal features of our perceptual world. Our ability to smell or sense the flavor of something is because of the olfactory cortex. From the extracted odor image of the stimulus in the olfactory bulb, the olfactory cortex creates the basis for the human perception of a unified smell perception, what is called an odor object.
