We are not aware of internal “retronasal” smell of the volatile molecules released from the wine in our mouths and throats. Much of wine flavor is thus an illusion that it comes from the mouth rather than smell receptors in the nose. This chapter first gives a history of how the concept arose. Scientists in the 1970s and 1980s introduced the idea that smell is a dual sense, due to breathing in or breathing out. We discuss the controversy over whether the sensations are the same or different when aroma of wine comes outside from the glass (orthonasal) or inside from the mouth (retronasal).
